Misc Food

Long overdue food stuff..Let's start with

1. Chinatown Special Yang Chow Fried Rice
I got to know this stall from a friend and finally get to try it.  It is very good.  I do not usually eat fried rice because they are hard and oily, but this is not.  Fragrant and grainy but not hard.  My favorite fried rice.  Oh did I mention that their chilli is also Power!!  Add additional $1 for the luncheon meat.


 2. Cajun Chicken Thigh from Botak Jones
Chicken is nice but the sides dishes are a little disappointing.


3. Kampong Chicken Rice from Chicken House
Ok loh..Not too fatty but not really fantastic either.


4. Papamia's Nyonya Fried Chicken Nasi Lemak
Chicken is crispy on the outside and juicy on the inside. Rice is grainy but not hard. Overall a nice nasi lemak. Yummy.

CNY 2013

What a busy CNY again.  We were both down with flu before the CNY and was thinking that this New Year will be a quiet one without much cooking. But we were wrong, and it was cooking and more cooking, with visitors and more visitors.  KK's sisters and brothers and aunt came.

Day 1: Poh Piah
Day 2: Hokkien Prawn Mee
Day 3: Fried Kway Teow
Day 4: Yam Rice

Since we were both a little unwell, we did not do the chicken curry this year.  Probably next year we will.


The Fried Kway Teow this round is pretty successful.  So I am documenting the steps and details. 

Sauce (made for 12-15 pax):
1 TB Woh Hup Oyster Sauce
1 TeaS Fish Sauce
2 TeaS L&P Worcestershire Sauce
3 TB Rose Sweet Sauce
5TB Red Dates Sauce
1TB Sugar
Half cup water
1-2TB Tiger Light Soy Sauce

Procedure:
1. Heat corn Oil, throw in garlic
2. Put in Lap cheong, add in a bit of prawn stock
3. Add in Bean sprouts and Cai Xin Stem
4. Noodle (a bit more stock)
5. Add kway teow
6. Fish cake and cai xin leaves
7. Sauce (2-3 TB)
8.  Egg
9. Chilli ABC or more stock for wet style
10. Add prawn (pre cooked)

CHICKEN MACARONI


My first attempt at making chicken macaroni.  Been wanting to do it but has been procrastinating.  Recently I got to know that my little nephew is having macaroni in his school, and he does not like it, so I decided to convince him through my cooking that macaroni is nice.  He complained that the macaroni he had in school is cold and hard, so I made sure mine is warm and soft for him.  He likes it. ♥


My little notes to remind myself what I did:

2 piece chicken thigh with bones, without skin - marinate this in starch and soya sauce.
Then cook it with a bit of water, soya sauce, ginger slices. Once cooked, take out to shred the chicken, leave the bones and gravy in the pot for cooking the macaroni soup base.

Boil the macaroni, then transfer them out to the soup base once almost half cooked. Add in peas, corn and carrot, also slices of ginger.

Served with finely chopped romaine lettuce.

BREAKFAST@HOME - ABC NOODLES

This is easy to make. Campbell's vegetarian ABC soup, any green leafy vegetables and instant noodle (just the noodle, without the soup base powder).

Just dump everything into the pot. That's basically it. Hahahaha..fast to cook, good to eat.

I had the Duck Hor Fun, KK had the Wanton Noodles. Not bad, except that I am surprised to find sesame seed in the gravy.  I hate sesame!!

SATAY 138

Finally I get to try my Redhill Satay at Redhill Food Centre, have been eyeing this stall for some time now.  The stall name "138", is a corner stall.  

They sell BBQ chicken wings too but I did not try that.  Decided to just go for the satay only.  

Satay variety: Chicken, Pork, Mutton. Each stick 40 cents.
Rice (ketupat) 50 cents each

Of all, we like the Pork most, next comes the chicken. Do not quite fancy the mutton, got strong mutton smell.
Only complaint is that the pieces are small, how I wish it's a bigger stick.  But at 40 cents a stick, guess I should not have ask for more.

It is not super duper satay, but for the price, it is pretty decent.  Will definitely order more in future! Yummy!

CNY SPECIALS

It is Chinese New Year celebration once again.  We spent about 2 hours having a family meeting on what to cook during the first few days of the Lunar New Year.  This is what we have come up with:

初一 (first day): Our family traditional Poh Piah
初二 (2nd day): Our family traditional Hokkien Mee
初三 (3rd day): Gado Gado and Char Kway Teow
初四 (4th day): Meatballs

Tell me about it, it is mad rush!  Despite the careful planning to write down all the necessary things we need, we still tend to make some changes last minute. Preparation and cooking for the first two days are by mum and aunt, whereas on the 3rd day onwards, it is me and KK.

Here are the dishes in order:

POH PIAH : This is really one traditional dish that I grew up with since my grandparents time.  It is also my first version of how Poh Piah is, and I remembered getting a shock when I tasted Poh Piah outside that seems so plain and different.

Turnip, carrot, cabbage, beancurd, bamboo shoot, mushroom, leek, minced garlic, chinese sausage, egg, shitake, french beans, prawns, local chinese lettuce and SpringHome Poh Piah skin. Preparation time: 4hrs.




















FRIED HOKKIEN MEE: I have no idea how this originates and if other families are preparing the noodles this way.  All I know, I grew up eating noodles prepared by my grandparents in this manner.  Ingredients include: Yellow noodles, prawns, cuttlefish, pork, straw mushroom, fishcake, egg (optional).  Preparation time: 3hrs.

This year, I bought the wrong mushroom and noodles, so it is not as perfect as I want it to be.






















GADO GADO: This is not traditional.  In fact, it is an experimental dish which we tried out for the first time. Wahahaha..seems easy to do but the dish took us 4.5hrs to prepare.  Struggling mainly with the peanut gravy which is so hard to get the texture and taste correct.  We followed the recipe book but things still turn out not as what we expected it to be. Overall still edible, but could be improved. Now are we going to experiment it again, or should I just head out to a hawker centre to have my favorite Gado Gado!

Ingredients:

Sauce (Fresh Chilli, Dried Shrimp, Shallots, Raw Peanuts, Tamarine Juice, Palm Sugar, Lime Leaves and Coconut Milk)

Boiled Potatoes, Boiled French Beans, Boiled Beansprouts, Hard Boiled Eggs, Fresh Lettuce and Fried Beancurd.




















CHAR KWAY TEOW:  This is another experimental dish, although this is not the first time we are attempting it.  Last year was a complete failure!  This time round, we referred to a few recipe book to be sure. And yes! It is GOOD! Only wish there are prawns..

Ingredients: Yellow Noodles, Kway Teow, Egg, Cai Sim, Beansprouts, Chinese Sausage, Cockles.

Seasoning Sauce:
1 tablespoon dark soya sauce
3 tablespoons sweet soya sauce
2 teaspoons chilli sauce
3 tablespoons oyster sauce
1 tablespoon tomato sauce
a little water

Steps:
1. Heat oil in work, stir fry garlic.
2. Fry chinese sausage first and then add kway teow and noodles.
3. Add three quarter of the seasoning ingredients.
4. Push aside kway teow and break eggs in the middle of the work.  Stir completely and add other ingredients.
5. Add remaining seasoning ingredients.
6. Add cockles.




MEATBALL (recipe by Lisa Butler):  This is a very special dish, all credit goes to my friend Lisa Butler from Missouri USA, who gave me this vintage recipe.  It is a recipe that her mother left behind for her, a recipe that was created for over 20 years ago! 

This is the exact recipe she gave me, I revised it slightly by adding Pork with the beef.  The rest remains the same.  Preparation time: 3hrs.




1 pound ground beef
3 tbsp grated Romano cheese
3 eggs
3 slices stale bread
1 clove garlic, chopped
salt and pepper to taste

Soak bread in water 5 minute, squeeze dry. Mix thoroughly with meat, slightly beaten eggs, grated Romano cheese, and garlic. Add salt and pepper to taste. 

Shape out balls about the size of a small egg; roll in flour; fry in hot oil about 10 minutes or til golden brown. Serve very hot with vegetables and salad. May also be served with spaghetti. Serves 4 to 6.

I would dare say this is the best meatball I have ever eaten.  Personally I find it is nicer than Ikea's Swedish Meatballs.

KK revised his formula too by adding some other ingredients.  He also made them into smaller balls similar to those of Ikea's Meatball. It is also good.

I like mine because it has more cheese flavor in it.

This year, we have KK's brothers coming by to sample our food. It is such a surprise, one of them came 3 days in a row, what a record! Hahaha..

I look forward to another CNY, but I do not think I will be experimenting stuff during CNY, it is so hard to keep the ingredients fresh for too many days.  Experimental stuff should be left to normal day/weekends.

It has been a good CNY, lotsa good food and company.  Only things I missed are my DVD movies and my Bak Kwa. Otherwise it would have been perfect.

POTATO CUTLETS

Happy New Year! Today is 1 Jan 2011.   We stayed home of course, to rest, and to do some cooking.  This time we are attempting to make Potato Cutlets. 

This is my first attempt.  KK did most of the work, I am just his assistant. A simple dish like this took us about 2hrs to prepare, from boiling the potatoes to doing the meat etc.

Ingredients used: Potatoes, Pork, Peas, Shallot, Lettuce, Mustard, Mayo, Ketchup, Egg and Bread Crumbs.


 
You got to mix the three main ingredients above together, then shaped them into a patty to be fried.

BREAKFAST @HOME - CHINESE SAUSAGE RICE

A little tired of hamburgers and bread, we decided to have a little Asian stuff - Rice.  KK prepared his favorite Chinese Sausage Rice. Ingredients used: Chinese sausage, rice, cabbage and japanese cucumber.  Yes, I like it, it is my first time eating it.

EXPERIMENT - PANCAKE

Our first attempt at chewy home made pancake.

Ingredients used: plain flour, glutinous rice flour, sugar, corn starch, water, peanuts.

Taste pretty good.

Our next attempt will be the savory version.

BREAKFAST @HOME - FRIED NOODLES

Ho ho ho!!, it is noodles time.  Believe it or not, it is my first attempt at frying this kind of fresh yellow noodles.  After washing it, they all broke and became so short. Hahaha.. but nevermind, still edible.

Ingredients used: Fresh yellow noodles, hotdogs (leftover), crabsticks, vegetables, fish cakes, onion, egg, garlic.  Preparation time: 45min.

Noticed that my dishes do not have seafood, that is because my rashes are not fully healed yet.  So for the meantime, no seafood and lots less chicken.  KK took over the frying because I am making a mess out of it all. LOL.  My ideal will be with seafood and pork, but since this round, we are trying to finish whatever stuff we have in the fridge, so make do with whatever we have.

It still taste nice!

BREAKFAST @HOME - PEANUT CONGEE

More congee for Tuesday's breakfast.  This time it is peanut with pork congee.  We had it with century eggs and spicy minced pork.  As usual, we used the slow cooker for the porridge, prepared it the night before.  Ingredients include: Rice, raw peanuts, lean pork, century eggs, preserved ginger, spicy minced pork (can), spring onion. Preparation time: 20mins.

I love my breakfast, it is yummy!

BREAKFAST @HOME- CARROT WITH PORK CONGEE

We decided to try more asian stuff this week. For a start, we have congee and dishes.

The one with spring onion is mine. The other is KK's of course.



This is the carrot and minced pork congee which we prepared with the slow cooker the night before.  We stir fried the vege in the morning. Preparation time is around 45mins.

Ingredients used: carrot, lean pork, rice, bean sprouts, tomoato, egg, chives (韭菜).

KK prepared the fried egg with chives, I did the beansprouts with tomatoes.  More congee tomorrow, you shall see what we have. hee hee..
